  1. Prepare the Vegetables

  1. Sauté the Zucchini

    • Heat the olive oil in a large pan over medium heat.
    • Add the zucchini and onion.
    • Season lightly with salt.
    • Cook until the onion softens and the zucchini becomes tender and lightly golden.
  1. Prepare the Ham

    • Cut the ham into small pieces.
    • If using smoked sausage or another cured meat, cook it beforehand if needed.
    • Set aside.
  1. Cool the Vegetables

    • Remove the zucchini mixture from the heat.
    • Allow it to cool slightly before combining with the eggs.
  1. Make the Egg Mixture

    • In a large bowl, beat the eggs.
    • Season with salt and black pepper.
    • Add the grated Parmesan cheese.
    • Stir in the breadcrumbs.
  1. Combine Everything

    • Add the cooled zucchini and onion mixture.
