Instructions

  1. Prepare the Chicken:
      • In a bowl, mix chicken thighs with mango masala, salt, sweet paprika, black pepper, and olive oil.
      • Heat cooking oil in a pan over medium heat.
      • Fry the chicken for 3 minutes on one side, then flip and cook for another 3 minutes.
  2. Cook the Vegetables:
      • Add the chopped onion to the same pan and sauté for 2 minutes.
      • Stir in the red and yellow peppers and cook for 2 minutes.
      • Add the mushrooms and garlic, season with salt and black pepper, and cook for 2 more minutes.
  3. Prepare the Rice:
      • In a pot, combine rice, water, and mango masala.
      • Bring to a boil over high heat, then reduce to low heat and cover.
      • Cook for 30 minutes or until the rice is soft.
  4. Make the Salad:
      • In a bowl, mix parsley, red onion, tomatoes, cucumber, and lettuce.
      • Season with salt, drizzle with olive oil and vinegar, and toss well.
      • Sprinkle with crumbled feta cheese before serving.
  5. Serve:
      • Plate the spiced chicken alongside the flavorful rice.
      • Add a side of fresh salad for a balanced meal.
