Roasted Chicken with Garlic Mustard Potatoes

  1. Prepare the Potatoes:
      • Boil the small potatoes in salted water for about 10 minutes until tender. Drain them and place them in a baking tray.
      • Season the potatoes with salt, pepper, and 50g butter. Add the chopped rosemary and mix well.
      • Using a spatula (or spoon if you don't have one), slightly crush the potatoes. Add a few more sprigs of rosemary.
      • Place the tray in a preheated oven at 200°C (392°F) and bake for 25 minutes, until crispy on the outside.
  2. Prepare the Chicken:
      • While the potatoes are baking, season the chicken breast slices with salt, sweet paprika, hot pepper (optional), pepper, oregano, and 1 tablespoon oil. Mix well.
      • Heat a pan over medium heat and cook the seasoned chicken for about 10 minutes, turning to brown on both sides.
  3. Prepare the Garlic Mustard Sauce:
      • In a small bowl, crush a few garlic cloves and add salt, a little oil, and a few tablespoons of chicken soup (or water).
      • Mix well, then add chopped fresh parsley for garnish.
  4. Assemble the Dish:
      • Once the chicken is cooked and the potatoes are crispy and golden, serve them together. Drizzle the garlic mustard sauce over the potatoes and enjoy the flavors.
