  1. Prepare the Meat:
      • Cut the pork ribs into cubes and place them in a large pot.
      • Heat 2 tablespoons of oil in the pot and add the meat.
      • Fry the meat until it takes on a light color.
      • Add enough water to cover the meat and bring to a boil. Let it cook for 10 minutes.
  2. Prepare the Vegetables:
      • While the meat is cooking, chop the onion, red bell pepper, celery, and carrot into small pieces or cubes.
      • Set the vegetables aside for later use.
  3. Continue Cooking the Meat:
      • After 10 minutes, discard the water and replace it with fresh water to cover the meat.
      • In a separate pan, heat 2 tablespoons of oil and add the chopped vegetables.
      • Fry the vegetables until they get a little color and soften.
  4. Combine and Cook:
      • Add the sautéed vegetables to the soup pot with the meat.
      • Add the 2 potatoes (cut into cubes) and 2 bay leaves.
      • Let the soup cook until the potatoes are tender.
  5. Prepare the Creamy Mixture:
      • In a separate bowl, mix 150 ml cooking cream with 2 egg yolks until smooth.
      • Take some of the hot soup and slowly add it to the creamy mixture to temper it, stirring continuously.
      • Pour the creamy mixture back into the soup, stirring constantly.
  6. Season the Soup:
      • Season the soup with salt to taste.
      • If you like it sour, add some borscht to the soup and let it cook for another 5 minutes.
  7. Serve:
      • Serve the soup hot and enjoy!
