  1. Prepare the Potatoes
    1. Wash the 500 grams of new potatoes thoroughly, as you will be using them with the skin on.
    2. Place the potatoes in a large pot, cover with cold water, and add 1 teaspoon of salt and 1 sprig of rosemary.
    3. Boil the potatoes until they are tender and a fork can pass through them.
    4. Once ready, drain and peel the potatoes using a knife or a teaspoon.
  2. Sauté the Vegetables
    1. Heat 2-3 tablespoons of olive oil in a pan over medium heat.
    2. Add the 2 finely chopped onions and 1 cup of water to the pan. Cook the onions until they soften.
    3. Add the 3 finely chopped garlic cloves, 1 sprig of rosemary, and 300 grams of sliced mushrooms. Cook for a few minutes until the mushrooms are soft.
  3. Combine and Season
    1. Add the peeled potatoes into the pan with the mushrooms and onions.
    2. Season with salt to taste and mix everything together.
    3. Cook for a few more minutes, allowing the flavors to blend.
