- In a large bowl, combine 250g ground almonds, 50g caster sugar, 1 tablespoon cinnamon, 8g baking powder, and 1 tablespoon cocoa powder.
- Mix well to combine.

Add the wet ingredients:

- Crack 2 eggs into a separate bowl, then add them to the dry mixture.
- Mix well using a spoon.
- Add 1 tablespoon flour and mix again until everything is incorporated.
- If using, add 1 tablespoon rum essence (or your preferred essence) and mix.

Form the dough balls:

- Wet your palms with water and take a small piece of dough.
- Roll it into a ball, not too large or small, just the right size for a biscuit.

Coat in powdered sugar:

- Place powdered sugar on a separate plate.
- Roll each dough ball in the powdered sugar, coating it evenly.

Prepare for baking:

- Line a baking tray with parchment paper.
- Place the powdered sugar-coated dough balls on the tray.
- Press a whole walnut into the center of each ball and gently flatten them with your hand.
