Apple and Walnut Croissants

Prepare the Dough:

- In a large bowl, combine 140 ml warm water, 10 g dry yeast, and 1 tablespoon sugar. Mix well.
- Add 250 g flour, a pinch of salt, and 30 g butter. Knead the dough for 10 minutes until it becomes smooth and elastic.
- Let the dough rise for 1 hour.

Prepare the Filling:

- Peel and cube 5 apples.
- In a bowl, add 2 tablespoons brown sugar, a pinch of ginger, cinnamon, and the juice of half a lemon. Mix well.
- In a pan, heat the apple mixture for 2-3 minutes until softened and slightly colored. Set aside to cool.

Prepare the Walnuts:

- Chop 50 g walnuts finely and grate the remaining 50 g for decoration.

Shape the Croissants:

- Once the dough has risen, grease the countertop with a bit of oil.
- Divide the dough into pieces and roll each into a ball.
- Roll each ball into a flat circle with your fingers.
- Add the apple mixture to the edges of each dough circle.
- Slice the remaining dough and roll it into croissants.
- Place the rolled croissants in a baking tray lined with baking paper.

Add the Finishing Touch:

- Brush the croissants with a mixture of 1 egg yolk and 2 tablespoons milk.
- Sprinkle grated walnuts on top.
- Let the croissants rise for 10 minutes.

Bake:

- Preheat the oven to 200°C and bake the croissants until golden brown on top, about 20-25 minutes.
