Vegetable Soup with Smoked Sausage

  1. Prepare the Sausage:
      • In a large pot, add 200g smoked caesar (cut into sticks) and sauté it until it gets color.
  2. Cook the Vegetables:
      • Finely chop 1 onion and slice 1 leek. Dice 1 red pepper.
      • Once the sausage is browned, remove it from the pot, and sauté the onion, leek, and pepper in the same pot for 2-3 minutes.
  3. Add Potatoes and Water:
      • Peel and cube 4-5 potatoes and add them to the pot with the sautéed vegetables.
      • Pour in 2 liters of water and mix everything well.
      • Cube 1 medium-sized carrot and add it to the pot, along with 1 celery stick (cut into pieces).
  4. Simmer the Soup:
      • Season with salt and bring the soup to a boil. Let it cook for 30 minutes.
  5. Final Touches:
      • Once the soup is nearly ready, add 3-4 tablespoons of tomato juice, and season with salt and pepper to taste.
      • Add borscht to taste (for a tangy flavor) and let it boil for a few more minutes.
  6. Garnish and Serve:
      • Once cooked, add fresh parsley and minced garlic for flavor.
      • Serve the soup hot, topped with sour cream and extra pepper.
