Prepare the Tuna Mixture:

- Drain the 2 cans of tuna and place them in a large bowl.
- Add the tomatoes (cut into larger pieces), finely chopped red onion, red bell pepper (diced), corn, and olives (cut into pieces).
- Stir in 1 tablespoon of parsley, 2 tablespoons of mayonnaise, and cheddar cheese.
- Season the mixture with salt and pepper to taste. Mix everything very well.

Assemble the Sandwiches:

- Preheat your oven to 200°C (392°F).
- Line an oven tray with baking paper.
- Place slices of bread on the tray.
- Spoon the tuna mixture onto each slice of bread.

Add Toppings and Bake:

- Place a slice of cheddar cheese on top of each sandwich, slightly thicker for that melt.
- Put the tray in the oven and bake for 15 minutes, or until the cheese is melted and bubbly.
