  1. Prepare the Dough:
      • In a large bowl, crack 1 egg and add 500 grams of cottage cheese.
      • Add a pinch of salt, vanilla essence (optional), and the peel of 1 lemon.
      • Stir in 2 tablespoons of sugar, adjusting to taste, then add the second egg.
      • Mix everything well to form a cohesive mixture.
  2. Add Flour:
      • Gradually add 4-5 tablespoons of flour to the mixture, mixing until you get a sticky dough.
  3. Shape the Papanasi:
      • Grease your hands with oil or flour to make shaping easier.
      • Take portions of the dough and shape them into doughnut-like circles, just like the traditional style.
      • Place the shaped dough onto a chopping board.
  4. Fry the Papanasi:
      • Heat oil in a frying pan over medium heat.
      • Fry the shaped dough until it starts to turn golden brown, then flip them and cook for a few more minutes.
  5. Drain and Coat:
      • Remove the fried papanasi from the oil and place them on paper towels to drain excess oil.
      • While still hot, coat them in sugar for that final touch (this step is optional but traditional).
  6. Serve and Enjoy:
      • Serve these delicious, golden papanasi with a generous sprinkle of sugar. Enjoy with tea or coffee for a comforting treat.
