  1. Activate the Yeast:
      • In a mixing bowl, combine the warm milk, yeast, honey, and 4 tablespoons of flour. Mix well and let it sit for 10 minutes until the yeast activates.
  2. Prepare the Dough:
      • Add the remaining flour and salt to the yeast mixture. Begin kneading the dough by hand until it starts to come together.
  3. Incorporate Butter:
      • Once the dough begins to form, add the room temperature butter. Continue kneading for 5-10 minutes until the dough becomes smooth and elastic.
  4. First Rise:

    Grease a bowl with olive oil and place the dough inside. Cover it with a kitchen towel and let it rise in a warm place for about an hour, or until doubled in size.

  5. Divide and Shape:
      • After the dough has risen, divide it into 14 equal-sized pieces. Shape each piece into a ball.
      • Roll out each ball into a rectangular shape using a rolling pin. Roll the dough into a tight spiral, similar to a cinnamon roll, and seal the edges tightly.
  6. Form the Loaves:
      • Place four rolls together, sealed edges down, and fold them over each other to form a loaf. Repeat with the remaining dough pieces.
  7. Second Rise:
      • Transfer the shaped loaves onto a baking tray lined with parchment paper. Cover with a kitchen towel and let them rise for another 30 minutes.
  8. Preheat the Oven:
      • Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  9. Egg Wash and Garnish:
      • In a small bowl, whisk together an egg yolk and a tablespoon of milk. Brush the tops of the loaves with the egg wash.
      • Sprinkle sesame seeds over the loaves for garnish.
  10. Bake:
      • Place the baking tray in the preheated oven and bake for 30-35 minutes, or until the bread is golden brown on top and sounds hollow when tapped on the bottom.
  11. Cool and Serve:
      • Once baked, transfer the bread to a wire rack to cool completely before slicing.
      • Enjoy your homemade fluffy bread with your favorite spreads or as a side to your favorite dishes.
