Instructions

  1. Prepare the Dough:
      • In a large bowl, mix together 100 ml warm milk, 100 ml water, 5 grams yeast, and stir well.
      • Add 280 grams of flour, a pinch of salt, and 2 tablespoons of oil. Mix until everything is combined.
      • Knead the dough for 5-10 minutes until it becomes smooth and no longer sticks to your fingers.
      • Let the dough rest for 10 minutes.
  2. Divide the Dough:
      • After 10 minutes, divide the dough into 4 balls.
  3. Prepare the Sheets:
      • Take one ball of dough and stretch it out on a clean surface.
      • Using a brush, grease both sides of the dough with oil.
      • Let it rest for another 10 minutes.
  4. Prepare the Filling:
      • In a bowl, combine 500 grams of cottage cheese, 2 eggs, 4 tablespoons of sugar, a little vanilla, and a pinch of salt. Mix well.
  5. Assemble the Pie:
      • Grease a 23 cm diameter baking tray with a little oil.
      • After resting, take one dough sheet and spread it on the worktop.
      • Divide the cheese mixture into 4 portions, sprinkle one portion evenly over the dough.
      • Roll the dough with the cheese inside, forming a roll.
      • Place the rolled pie into the greased tray. Repeat with the other dough balls and cheese portions.
  6. Egg Wash:
      • In a bowl, whisk together 1 egg yolk and 2 tablespoons of milk.
      • Use this mixture to brush the top of the pie.
  7. Bake:
      • Sprinkle a few almond flakes on top of the pie, if desired.
      • Place the tray in a preheated oven at 180°C for about 1 hour, or until golden and crispy.
  8. Serve:
