Potato Stew with Sausages

Ingredients

Instructions

  1. Prepare the Sausages:
      • Heat 2-3 tablespoons of oil in a pan.
      • Add 10 sausages and fry them until they are browned on all sides.
      • If using smoked sausages, this will add a deeper flavor. Set the sausages aside on a plate after frying.
  2. Cook the Vegetables:
      • In the same pan with the remaining oil, add 1 finely chopped onion and 1 finely chopped red pepper (or any pepper variety you prefer).
      • Fry for a few minutes until the vegetables soften.
  3. Combine the Ingredients:
      • Slice the sausages into pieces (not too small, not too large) and add them back to the pan.
      • Add 5-6 cubed potatoes to the pan with the vegetables.
      • Season with salt, oregano, paprika, garlic powder, and pepper. Adjust to taste.
      • Stir everything well to combine.
  4. Add Tomatoes and Simmer:
      • Pour in 400 grams of canned tomatoes (or fresh, if using), and stir.
      • Add 500 milliliters of water to cover the potatoes. Adjust the water amount depending on the size of your pot.
      • Mix everything thoroughly and leave the stew to simmer on medium heat for about 45 minutes.
      • Stir occasionally to ensure the stew doesn’t stick to the bottom of the pan.
  5. Finishing Touches:
      • While the stew is simmering, chop some dill (or parsley if preferred).
      • Once the potatoes are cooked through and the stew has thickened, sprinkle the chopped dill on top for added flavor and freshness.
  6. Serve:
      • Serve the potato stew warm, with a side of pickled cucumbers in the winter or a tomato and cucumber salad in the summer for a refreshing touch.
Tip: This dish is versatile and can be adapted to use any vegetables or herbs you have available. Enjoy a comforting meal perfect for any season!
