Potato Stew with Sausages
Ingredients
Instructions
-
Prepare the Sausages:
-
- Heat 2-3 tablespoons of oil in a pan.
- Add 10 sausages and fry them until they are browned on all sides.
- If using smoked sausages, this will add a deeper flavor. Set the sausages aside on a plate after frying.
-
-
Cook the Vegetables:
-
- In the same pan with the remaining oil, add 1 finely chopped onion and 1 finely chopped red pepper (or any pepper variety you prefer).
- Fry for a few minutes until the vegetables soften.
-
-
Combine the Ingredients:
-
- Slice the sausages into pieces (not too small, not too large) and add them back to the pan.
- Add 5-6 cubed potatoes to the pan with the vegetables.
- Season with salt, oregano, paprika, garlic powder, and pepper. Adjust to taste.
- Stir everything well to combine.
-
-
Add Tomatoes and Simmer:
-
- Pour in 400 grams of canned tomatoes (or fresh, if using), and stir.
- Add 500 milliliters of water to cover the potatoes. Adjust the water amount depending on the size of your pot.
- Mix everything thoroughly and leave the stew to simmer on medium heat for about 45 minutes.
- Stir occasionally to ensure the stew doesn’t stick to the bottom of the pan.
-
-
Finishing Touches:
-
- While the stew is simmering, chop some dill (or parsley if preferred).
- Once the potatoes are cooked through and the stew has thickened, sprinkle the chopped dill on top for added flavor and freshness.
-
-
Serve:
-
- Serve the potato stew warm, with a side of pickled cucumbers in the winter or a tomato and cucumber salad in the summer for a refreshing touch.
Tip: This dish is versatile and can be adapted to use any vegetables or herbs you have available. Enjoy a comforting meal perfect for any season! -
