Prepare the Walnuts:
Grate half of the walnuts and chop the other half finely. Set aside.

Prepare the Fruit:

- Cut the plums and peaches (or other fruit) into smaller pieces. Set aside.

Prepare the Puff Pastry:

- Roll out the sheet of puff pastry and cut it into 8 equal pieces.

Prepare the Baking Tray:

- Line a baking tray with baking paper.
- Spread honey on the baking paper.

Assemble the Pastries:

- Place the fruit on top of the honey in the tray and seal the fruit with the puff pastry dough.

Prepare the Egg Wash:

- In a bowl, mix the egg yolk and 2 tablespoons of milk.
- Brush this mixture over the puff pastry.

- Preheat the oven to 200°C (392°F) and bake the pastries for 20 minutes or until golden brown.
