  1. Prepare the Vegetables:
      • Slice the potato thinly to ensure faster cooking.
      • Finely chop the onion.
  2. Cook the Potatoes and Onion:
      • Heat 3 tablespoons of oil in a pan.
      • Add the potatoes and onion, pour in ½ glass of water, cover with a lid, and let them cook.
      • If the water evaporates before the potatoes are soft, add a little more and continue cooking.
  3. Prepare the Egg Mixture:
      • In a bowl, beat the 3 eggs with salt and pepper.
      • Finely chop the chives (or green onion/parsley) and mix them into the eggs.
  4. Prepare the Tomatoes:
      • Slice the tomatoes, season them with salt, pepper, and olive oil, and set them aside.
  5. Combine and Cook the Omelette:
      • Once the potatoes are fully cooked, add them to the egg mixture and mix well.
      • Heat a little more oil in the pan, pour in the egg and potato mixture, and arrange the tomato slices on top.
      • Cook on low heat for 5-7 minutes.
      • Grease a plate with oil, flip the omelette onto it, and cook for another 2-3 minutes on the other side.
  6. Serve and Enjoy:
      • Slice and serve hot.
