- Slice the potato thinly to ensure faster cooking.
- Finely chop the onion.

Cook the Potatoes and Onion:

- Heat 3 tablespoons of oil in a pan.
- Add the potatoes and onion, pour in ½ glass of water, cover with a lid, and let them cook.
- If the water evaporates before the potatoes are soft, add a little more and continue cooking.

Prepare the Egg Mixture:

- In a bowl, beat the 3 eggs with salt and pepper.
- Finely chop the chives (or green onion/parsley) and mix them into the eggs.

Prepare the Tomatoes:

- Slice the tomatoes, season them with salt, pepper, and olive oil, and set them aside.

Combine and Cook the Omelette:

- Once the potatoes are fully cooked, add them to the egg mixture and mix well.
- Heat a little more oil in the pan, pour in the egg and potato mixture, and arrange the tomato slices on top.
- Cook on low heat for 5-7 minutes.
