Instructions

  1. Prepare the Potato Base:

    2. In a large bowl, whisk eggs with sour cream, salt, and black pepper.
    3. Add flour and mix until you get a pancake-like batter.
    4. Stir in the chopped parsley (if using).
    5. Add the grated potatoes to the mixture and combine well.
    6. Drizzle olive oil and mix again.
  2. Bake the Base:
    1. Preheat the oven to 200°C (392°F).
    2. Pour the mixture into a baking tray lined with parchment paper.
    3. Bake for about 20-25 minutes or until golden brown on top.
  3. Add the Toppings:
    1. While the base is baking, chop the tomatoes and season them with salt and pepper.
    2. Once the base is done, spread the tomatoes over it.
    3. Sprinkle grated cheddar cheese on top.
  4. Final Bake:
    1. Return to the oven for another 10 minutes, or until the cheese melts.
    2. Remove from the oven and let it cool slightly before slicing.
A delicious, crispy potato-based pizza perfect for a quick and satisfying dinner!
