Prepare the Potato Base:
- Grate the potatoes and rinse them in water to remove excess starch.
- In a large bowl, whisk eggs with sour cream, salt, and black pepper.
- Add flour and mix until you get a pancake-like batter.
- Stir in the chopped parsley (if using).
- Add the grated potatoes to the mixture and combine well.
- Drizzle olive oil and mix again.

- Preheat the oven to 200°C (392°F).
- Pour the mixture into a baking tray lined with parchment paper.
- Bake for about 20-25 minutes or until golden brown on top.

- While the base is baking, chop the tomatoes and season them with salt and pepper.
- Once the base is done, spread the tomatoes over it.
- Sprinkle grated cheddar cheese on top.
