Instructions

  1. Prepare the Mashed Potatoes
    1. Peel the potatoes and place them in a large saucepan.
    2. Cover the potatoes with cold, clean water and rinse them well.
    3. Add 1 teaspoon of salt and 1 sprig of rosemary (optional).
    4. Boil the potatoes until they are soft. Once they are cooked, drain the water.
    5. Mash the potatoes in a bowl and add 1 tablespoon of butter, 1 tablespoon of cream cheese, pepper, and a little milk. Mix everything until you get a creamy consistency.
  2. Prepare the Chicken
    1. Preheat the oven to 200°C (392°F).
    2. In a bowl, mix salt, pepper, sweet paprika, oregano, and 2-3 tablespoons of olive oil.
    3. Coat the 3 chicken breasts (cut in half) with the seasoning mixture.
    4. Place the chicken in an oven-safe dish and bake in the oven for about 25 minutes or until fully cooked.
  3. Prepare the Salad
    1. In a separate bowl, combine diced tomatoes, diced avocado, chopped onions, and fresh parsley.
    2. Season with salt, pepper, and mix in 1 tablespoon of yogurt for creaminess.
  4. Bake the Mashed Potatoes
    1. Transfer the mashed potatoes to an oven-safe pan.
    2. Grate 50-60 grams of cheddar cheese (or any cheese you prefer) and sprinkle it over the mashed potatoes.
    3. Season with pepper and oregano.
    4. Place the pan in the oven and bake until the cheese is melted and golden, about 10-15 minutes.
  5. Serve
    1. Serve the oven-baked mashed potatoes alongside the baked chicken breasts and the salad.
