Oven-Baked Chicken with Potatoes and Tomatoes

  1. Prepare the potatoes:
      • Cut 7 potatoes into small pieces and place them in a bowl.
      • Season with salt, black pepper, garlic powder, onion powder, oregano, and chicken seasoning mix.
      • Add 1 tablespoon of olive oil, mix well, and set aside.
  2. Prepare the tomatoes:
      • Wash and chop 4 tomatoes into desired shapes.
      • Season with salt, black pepper, and 1 tablespoon of olive oil, then set aside.
  3. Prepare the garlic:
      • Finely chop 4 garlic cloves and divide them into two portions.
  4. Assemble the tray:
      • Place the potatoes in a baking tray.
      • Add the chopped tomatoes on top.
      • Sprinkle half of the chopped garlic over them.
  5. Prepare the chicken:
      • Score the chicken legs with a knife to help absorb flavors.
      • In a large bowl, mix oregano, the remaining garlic, salt, chicken seasoning mix, olive oil, yogurt, and spicy paprika.
      • Coat the chicken legs well in the mixture.
      • Place the chicken legs over the potatoes and brush them with the remaining marinade.
      • Sprinkle with rosemary and thyme.
  6. Bake the dish:
      • Preheat the oven to 200°C (392°F).
      • Bake in the middle rack for about 1 hour, or until the chicken is golden and tender.
  7. Serve and enjoy!
      • Remove from the oven, let it rest for a few minutes, and serve hot.
