  1. Prepare the Meatballs:
      • In a bowl, combine 400g minced pork, 2 tablespoons breadcrumbs, 2 grated garlic cloves, 1 grated onion, and a handful of chopped parsley.
      • Add 1 egg, salt, and black pepper to taste.
      • Mix everything well with your hands until evenly combined.
      • Shape the mixture into meatballs and set them aside.
  2. Make the Tomato Sauce:
      • Grate 6 medium-sized tomatoes and place them in an oven tray.
      • Season with salt, black pepper, garlic powder, and 1 tablespoon olive oil.
      • Mix everything well and set aside.
  3. Prepare the Potatoes:
      • Slice the potatoes into rounds, neither too thick nor too thin.
      • Lay one slice of potato in the oven tray, add a meatball on top, and then cover it with another slice of potato, like a sandwich.
  4. Assemble and Bake:
      • Place the assembled potato and meatball "sandwiches" in the tomato sauce.
      • Season with salt, pepper, paprika, thyme, and rosemary.
      • Add a little water (to help with cooking) and drizzle 2 tablespoons olive oil on top.
      • Preheat your oven to 200°C (392°F) and bake for 40 minutes, or until the potatoes are tender and golden.
  5. Serve:
      • Once cooked, remove from the oven and enjoy this delicious, hearty dish!
