  1. Prep the Meat:
      • Cut the meat into cubes and season with salt, pepper, paprika, garlic powder, and 1 tablespoon of olive oil. Mix well to coat.
  2. Prep the Veggies:
      • Dice the potatoes, carrots, bell peppers, celery, green onions, and smash the garlic cloves.
  3. Assemble the Dish:
      • In a large oven-safe baking dish, add 1 tablespoon of olive oil.
      • Add all the chopped vegetables and garlic.
      • Season with salt, pepper, paprika, garlic powder, and chili flakes (if desired).
      • Place the seasoned meat on top and mix everything well.
  4. Prepare the Sauce:
      • In a small bowl, mix 100 ml water with 100 ml tomato juice.
      • Pour the mixture over the meat and vegetables.
      • Add a few sprigs of fresh thyme on top.
  5. Bake:
      • Preheat the oven to 200°C (392°F).
      • Bake for 40 minutes, or until the meat is cooked through and the vegetables are tender and slightly caramelized.
