Prepare the Dough:
- In a large bowl, add the flour and make a well in the center.
- Pour in the warm milk, yeast, and sugar. Mix slightly, taking a little flour from the edges.
- Let the yeast activate for 10 minutes.
- Add Greek yogurt, salt, and eggs, then start kneading.
- When the dough starts forming, add oil and knead for another 10 minutes until smooth.
- Cover the bowl and let the dough rise for 1 hour until doubled in size.

Shape and Fry the Flatbreads:
- After the dough has risen, take small pieces and shape them into round discs.
- If making filled flatbreads, mix the cheese filling ingredients, place some in the center of a dough disc, fold it over, and seal the edges well.
- Heat oil in a deep pan over medium heat.
- Fry the flatbreads until golden brown on both sides.
- Place them on a paper towel to remove excess oil.
