  1. Cook the Beans
    1. In a large pot, add the washed beans and fill three-quarters of the pot with water.
    2. Add the whole scored onion, 2 carrots, bay leaf, rosemary sprigs, and salt.
    3. Boil until the beans are soft, then drain, keeping some of the cooking water.
  2. Prepare the Onion Base
    1. In a well-heated pan, add a generous amount of oil.
    2. Add the 2 finely chopped onions and a bay leaf.
    3. Sauté over low heat until the onions become golden brown.
  3. Prepare the Garlic Sauce
    1. In a small bowl, add the grated garlic, a pinch of salt, and rub well with oil.
    2. Add a little water and mix in the dill for extra flavor.
  4. Combine Everything
    1. When the onions turn golden, add 100 ml of broth.
    2. Stir in the boiled beans and add some of the reserved cooking water.
    3. Let everything simmer for about 20 minutes, or until the sauce thickens.
    • Serve hot with fresh parsley or dill, alongside pickles or hot peppers. • Enjoy with bread or polenta for a complete meal!
