  1. Prepare the Vegetables

    2. Peel and slice the carrots. Cut half into slices and the other half into small cubes.
    3. Wash, seed, and chop the red bell pepper into small pieces.
    4. Peel and chop the potatoes into small pieces.
  2. Sauté the Vegetables
    1. Heat 2-3 tablespoons of oil in a large pot.
    2. Add the leek and sauté it for a few minutes until it begins to soften and change color.
    3. Add the garlic, carrots, and red pepper. Cook for another 3-4 minutes, stirring occasionally.
  3. Add the Broth and Potatoes
    1. Add 1 liter of fish broth (or water) to the pot.
    2. Stir in the potatoes and bring everything to a boil.
    3. Reduce the heat and simmer for about 10-15 minutes, or until the vegetables are tender.
  4. Add the Fish
    1. Cut the salmon (or your choice of fish) into smaller pieces.
    2. Add the fish to the soup and cook for about 10 minutes or until the fish is fully cooked and flakes easily.
  5. Final Seasoning
    1. Season the soup with salt to taste.
    2. Stir in 1 teaspoon of sour cream and a squeeze of lemon juice (if desired).
    3. Garnish with fresh dill.
  6. Serve
    1. Serve the fish soup hot with a slice of bread if desired.
