Prepare the Vegetables
- Wash and chop the leek into strips and then into smaller pieces.
- Peel and slice the carrots. Cut half into slices and the other half into small cubes.
- Wash, seed, and chop the red bell pepper into small pieces.
- Peel and chop the potatoes into small pieces.

Sauté the Vegetables
- Heat 2-3 tablespoons of oil in a large pot.
- Add the leek and sauté it for a few minutes until it begins to soften and change color.
- Add the garlic, carrots, and red pepper. Cook for another 3-4 minutes, stirring occasionally.

Add the Broth and Potatoes
- Add 1 liter of fish broth (or water) to the pot.
- Stir in the potatoes and bring everything to a boil.
- Reduce the heat and simmer for about 10-15 minutes, or until the vegetables are tender.

Add the Fish
- Cut the salmon (or your choice of fish) into smaller pieces.
- Add the fish to the soup and cook for about 10 minutes or until the fish is fully cooked and flakes easily.

Final Seasoning
- Season the soup with salt to taste.
- Stir in 1 teaspoon of sour cream and a squeeze of lemon juice (if desired).
- Garnish with fresh dill.
