  1. Prepare the chicken:
      • Cut the chicken thighs into bite-sized pieces.
      • Heat 2 tablespoons of oil in a pan, add the chicken pieces, and cook until the chicken changes color and is cooked through.
  2. Prepare the vegetables:
      • Slice the onion into thin slices.
      • Slice the red, green, and yellow bell peppers into strips.
      • Once the chicken is cooked, remove it from the pan and set aside.
      • In the same pan, add the onion and cook until it softens and changes color.
      • Add the bell peppers and continue cooking for another 2-3 minutes.
      • Season the vegetables with Chinese food spices and salt.
  3. Cook the noodles:
      • In a separate pot, bring water to a boil, adding a pinch of salt.
      • Add 4 packets of noodles and cook according to package instructions.
  4. Combine everything:
      • Once the vegetables are cooked, return the chicken to the pan with the veggies.
      • Add a few tablespoons of soy sauce and cook for 1-2 minutes to let the flavors meld.
      • Drain the cooked noodles and add them to the pan.
      • Add 1 tablespoon of oyster sauce and mix everything well.
  5. Finish and serve:
      • Crush a handful of peanuts and sprinkle them on top of the dish for added texture and flavor.
      • Serve the stir-fry with a side of carrot salad (seasoned with salt and pepper).
