Cheesy Bacon & Mushroom Bake

  1. Heat 2-3 tbsp of oil in a pan over medium heat.
  2. Add the bacon and fry for 2-3 minutes, then remove it from the pan and set aside.
  3. In the same pan, fry the chopped onion and the white part of the spring onions for 2 minutes.
  4. Add the red pepper (or other vegetables of choice) and fry for another 2 minutes.
  5. Stir in the mushrooms and cook for 5 minutes, stirring occasionally.
  6. Add the cherry tomatoes, season with salt and black pepper, and mix well.
  7. Return the bacon to the pan and stir in the crème fraîche and water.
  8. Transfer the mixture to a baking dish and top with cheese.
  9. Bake in a preheated oven at 180°C (350°F) for 20 minutes
  10. Garnish with chopped green spring onions and parsley before serving.
