  1. Prepare the Apples:
      • Peel and core the apples. Cut off the ends for stability and then chop them into small pieces.
      • Place them in a bowl and let them cool.
  2. Prepare the Walnut Mixture:
      • Chop 60 grams walnuts (half finely chopped and half grated) and mix them with 1 tablespoon maple syrup (or sugar), a pinch of ginger, and cinnamon. Set this mixture aside.
  3. Assemble the Cake Base:
      • Grease a baking pan with butter and sprinkle 2 tablespoons of sugar in the pan.
      • Place the chopped apples in the pan and stuff them with the walnut mixture using a teaspoon.
  4. Prepare the Sponge Cake:
      • In a large bowl, whisk together the 6 eggs and 1 teaspoon salt for about 5 minutes until fluffy.
      • Add 180 grams sugar, 1 teaspoon vanilla extract, and mix well.
      • Pour in 30 milliliters of oil and mix for another minute.
      • Gradually fold in 180 grams of cake flour using a whisk until smooth.
      • Pour the sponge mixture over the apples in the pan.
  5. Bake the Cake:
      • Preheat the oven to 165°C (330°F) and bake the cake until a toothpick inserted comes out clean (about 30-40 minutes).
  6. Prepare the Cream:
      • In a separate bowl, combine 150 milliliters of cream, 3-4 tablespoons of sugar, 1 teaspoon vanilla essence, and 2 tablespoons cream cheese. Whisk until smooth.
  7. Cool and Decorate:
      • Once the cake is done, let it cool completely before removing it from the pan and decorating with the cream.
