Prepare the Apples:

- Peel and core the apples. Cut off the ends for stability and then chop them into small pieces.
- Place them in a bowl and let them cool.

Prepare the Walnut Mixture:

- Chop 60 grams walnuts (half finely chopped and half grated) and mix them with 1 tablespoon maple syrup (or sugar), a pinch of ginger, and cinnamon. Set this mixture aside.

Assemble the Cake Base:

- Grease a baking pan with butter and sprinkle 2 tablespoons of sugar in the pan.
- Place the chopped apples in the pan and stuff them with the walnut mixture using a teaspoon.

Prepare the Sponge Cake:

- In a large bowl, whisk together the 6 eggs and 1 teaspoon salt for about 5 minutes until fluffy.
- Add 180 grams sugar, 1 teaspoon vanilla extract, and mix well.
- Pour in 30 milliliters of oil and mix for another minute.
- Gradually fold in 180 grams of cake flour using a whisk until smooth.
- Pour the sponge mixture over the apples in the pan.

- Preheat the oven to 165°C (330°F) and bake the cake until a toothpick inserted comes out clean (about 30-40 minutes).

- In a separate bowl, combine 150 milliliters of cream, 3-4 tablespoons of sugar, 1 teaspoon vanilla essence, and 2 tablespoons cream cheese. Whisk until smooth.
