Prepare the Vegetables
- Wash the zucchini well.
- Remove the core if necessary and cut it into thin slices.
- Finely chop the onion and separate the layers with your fingers.

Sauté the Zucchini
- Heat the olive oil in a large pan over medium heat.
- Add the zucchini and onion.
- Season lightly with salt.
- Cook until the onion softens and the zucchini becomes tender and lightly golden.

Prepare the Ham
- Cut the ham into small pieces.
- If using smoked sausage or another cured meat, cook it beforehand if needed.
- Set aside.

Cool the Vegetables
- Remove the zucchini mixture from the heat.
- Allow it to cool slightly before combining with the eggs.

Make the Egg Mixture
- In a large bowl, beat the eggs.
- Season with salt and black pepper.
- Add the grated Parmesan cheese.
- Stir in the breadcrumbs.

- Add the cooled zucchini and onion mixture.
- Add the diced ham.
