Spaghetti with Fresh Tomato Sauce (Paste cu Roșii)

  1. Prepare the sauce:

    • Heat 2–3 tbsp olive oil in a pan.

    • Lightly sauté garlic for 2 minutes (don’t burn it).

    • Add chopped onion, cook until golden.

    • Add halved tomatoes and ½ glass of water (or broth/wine).

    • Cook until tomatoes soften, then remove the skins.

    • Season with salt, pepper, basil, baking soda, and oregano.

  1. Cook the pasta:

    • Boil spaghetti in salted water, cooking 2–3 minutes less than package instructions.

    • Add a ladle of pasta water to the sauce and mix.

  1. Combine and finish:

    • Add pasta to the sauce, cook for 2 more minutes.

    • Finish with plenty of grated Parmesan and fresh basil.
