Zucchini Stew with Chicken and Parmesan

Ingredients
  • 1 piece of chicken breast (cut into cubes)
  • 3 tbsp oil (for frying)
  • 4 cloves garlic (crushed and finely chopped)
  • 1 red onion (chopped into small cubes)
  • 1 medium zucchini (cut into cubes)
  • 1 red pepper (cut into small cubes)
  • Parsley (for garnish, can substitute with spinach)
  • 1 can of tomatoes in their juice (or fresh tomatoes, if preferred)
  • 1 can of mushroom cream
  • Salt and pepper (to taste)
  • Fresh grated parmesan cheese (for serving)
  • Hot bread (optional, for serving)
Instructions

    Prepare the chicken:
      • Cut the chicken breast into cubes.
      • Heat 2-3 tablespoons of oil in a pan and fry the chicken until browned.

    Add vegetables:
      • Finely chop 4 cloves of garlic and 1 red onion.
      • Cut 1 medium zucchini and 1 red pepper into cubes.
      • Once the chicken is browned, add the garlic, onion, zucchini, and red pepper to the pan. Season with salt and pepper to taste.

    Add canned ingredients:
      • Add 1 can of tomatoes in their juice and 1 can of mushroom cream to the pan. Mix everything together.

    Bake the stew:
      • Sprinkle chopped parsley over the stew (you can also use spinach if preferred).
      • Transfer the pan to the oven and bake for 30 minutes at 200°C (392°F).

      • Once baked, serve the stew hot with freshly grated parmesan cheese and hot bread.
