Walnut and Almond Biscuits

Ingredients
  • 250 grams ground almonds (or ground walnuts if preferred)
  • 50 grams caster sugar
  • 1 tablespoon cinnamon (optional, can be omitted if allergic)
  • 8 grams baking powder
  • 1 tablespoon cocoa powder
  • 2 medium-sized eggs
  • 1 tablespoon flour
  • rum essence (optional, can be replaced with vanilla or almond essence)
  • Powdered sugar (for rolling the dough balls)
  • Whole walnuts (for topping)
Instructions
  1. Prepare the dry ingredients:
      • In a large bowl, combine 250g ground almonds, 50g caster sugar, 1 tablespoon cinnamon, 8g baking powder, and 1 tablespoon cocoa powder.
      • Mix well to combine.
  2. Add the wet ingredients:
      • Crack 2 eggs into a separate bowl, then add them to the dry mixture.
      • Mix well using a spoon.
      • Add 1 tablespoon flour and mix again until everything is incorporated.
      • If using, add 1 tablespoon rum essence (or your preferred essence) and mix.
  3. Form the dough balls:
      • Wet your palms with water and take a small piece of dough.
      • Roll it into a ball, not too large or small, just the right size for a biscuit.
  4. Coat in powdered sugar:
      • Place powdered sugar on a separate plate.
      • Roll each dough ball in the powdered sugar, coating it evenly.
  5. Prepare for baking:
      • Line a baking tray with parchment paper.
      • Place the powdered sugar-coated dough balls on the tray.
      • Press a whole walnut into the center of each ball and gently flatten them with your hand.
  6. Bake the biscuits:
      • Preheat the oven to 180°C (350°F).
      • Bake the biscuits for 15 minutes or until slightly golden on the edges.
  7. Serve:
      • Let the biscuits cool and enjoy this delicious treat with your family!
