Walnut and Almond Biscuits
Ingredients
250
g
ground almonds (or ground walnuts if preferred)
50
g
caster sugar

tbsp
cinnamon (optional, can be omitted if allergic)

baking powder

cocoa powder

medium-sized eggs

tbsp
flour
tbsp
rum essence (optional, can be replaced with vanilla or almond essence)
Powdered sugar (for rolling the dough balls)
Whole walnuts (for topping)
Instructions

Prepare the dry ingredients:
In a large bowl, combine
250g ground almonds
,
50g caster sugar
,
1 tablespoon cinnamon
,
8g baking powder
, and
1 tablespoon cocoa powder
.
Mix well to combine.

Add the wet ingredients:
Crack
2 eggs
into a separate bowl, then add them to the dry mixture.
Mix well using a spoon.
Add
1 tablespoon flour
and mix again until everything is incorporated.
If using, add
1 tablespoon rum essence
(or your preferred essence) and mix.

Form the dough balls:
Wet your palms with water and take a small piece of dough.
Roll it into a ball, not too large or small, just the right size for a biscuit.

Coat in powdered sugar:
Place powdered sugar on a separate plate.
Roll each dough ball in the powdered sugar, coating it evenly.

Prepare for baking:
Line a baking tray with parchment paper.
Place the powdered sugar-coated dough balls on the tray.
Press a whole walnut into the center of each ball and gently flatten them with your hand.

Bake the biscuits:
Preheat the oven to
180°C (350°F)

Bake the biscuits for
15 minutes
or until slightly golden on the edges.
