Vegetable Soup with Smoked Sausage
Ingredients
200
g
smoked caesar (smoked sausage), cut into sticks

onion, finely chopped
1
leek, sliced
1
red pepper, diced

potatoes, cubed
1
medium-sized carrot, cubed
1
celery stick (or root celery, if preferred)

tomato juice
Salt, to taste
Pepper, to taste
Borscht, to taste
Fresh parsley, chopped
Garlic, minced
Sour cream (for serving)

Instructions

Prepare the Sausage:
In a large pot, add
200g smoked caesar
(cut into sticks) and sauté it until it gets color.

Cook the Vegetables:
Finely chop
1 onion
and slice
1 leek
. Dice
1 red pepper
.
Once the sausage is browned, remove it from the pot, and sauté the onion, leek, and pepper in the same pot for 2-3 minutes.

Add Potatoes and Water:
Peel and cube
4-5 potatoes
and add them to the pot with the sautéed vegetables.
Pour in
2 liters of water
and mix everything well.
Cube
1 medium-sized carrot
and add it to the pot, along with
1 celery stick
(cut into pieces).

Simmer the Soup:
Season with
salt
and bring the soup to a boil. Let it cook for
30 minutes
.

Final Touches:
Once the soup is nearly ready, add
3-4 tablespoons of tomato juice
, and season with
salt
and
pepper
to taste.
Add
borscht
to taste (for a tangy flavor) and let it boil for a few more minutes.

Garnish and Serve:
Once cooked, add
fresh parsley
and
minced garlic
for flavor.
Serve the soup hot, topped with
sour cream
and extra
pepper
.
