Tuna Sandwiches with Cheddar

Ingredients
  • 2 cans of tuna (drained from oil)
  • 2 tomatoes (cut into larger pieces)
  • 1 red onion (finely chopped)
  • 1 red bell pepper (diced)
  • Corn (to taste)
  • Olives (cut into pieces)
  • 1 tablespoon of parsley (chopped)
  • 2 tablespoons of mayonnaise
  • 2 large fists full of cheddar cheese (grated or sliced)
  • Salt and pepper (to taste)
  • Bread slices (for sandwich)
  • Baking paper (for lining the tray)
  • Cheddar cheese slices (for topping, slightly thicker)
Instructions
  1. Prepare the Tuna Mixture:
      • Drain the 2 cans of tuna and place them in a large bowl.
      • Add the tomatoes (cut into larger pieces), finely chopped red onion, red bell pepper (diced), corn, and olives (cut into pieces).
      • Stir in 1 tablespoon of parsley, 2 tablespoons of mayonnaise, and cheddar cheese.
      • Season the mixture with salt and pepper to taste. Mix everything very well.
  2. Assemble the Sandwiches:
      • Preheat your oven to 200°C (392°F).
      • Line an oven tray with baking paper.
      • Place slices of bread on the tray.
      • Spoon the tuna mixture onto each slice of bread.
  3. Add Toppings and Bake:
      • Place a slice of cheddar cheese on top of each sandwich, slightly thicker for that melt.
      • Put the tray in the oven and bake for 15 minutes, or until the cheese is melted and bubbly.
  4. Serve:
      • Once baked, remove from the oven, and serve warm. Enjoy your delicious and easy-to-make tuna sandwiches!
