Traditional Papanasi with Cheese and Sugar
Ingredients

A pinch of salt
Vanilla essence (optional)
Peel of 1 unpeeled lemon

Instructions
Prepare the Dough:
In a large bowl, crack
1 egg
and add
500 grams of cottage cheese
.
Add a pinch of
salt
,
vanilla essence
(optional), and the
peel of 1 lemon
.
Stir in
2 tablespoons of sugar
, adjusting to taste, then add the second
egg
.
Mix everything well to form a cohesive mixture.
Add Flour:
Gradually add
4-5 tablespoons of flour
to the mixture, mixing until you get a sticky dough.
Shape the Papanasi:
Grease your hands with oil or flour to make shaping easier.
Take portions of the dough and shape them into
doughnut-like
circles, just like the traditional style.
Place the shaped dough onto a chopping board.
Fry the Papanasi:
Heat
oil
in a frying pan over medium heat.
Fry the shaped dough until it starts to turn
golden brown
, then flip them and cook for a few more minutes.
Drain and Coat:
Remove the fried
papanasi
from the oil and place them on paper towels to drain excess oil.
While still hot, coat them in
