Tocană de Porc (Pork Stew)
Ingredients
4
slices of pork (cut into strips and cubes)
2
tablespoons sunflower oil (for frying)
Salt, to taste
Sweet paprika, to taste (or hot pepper if preferred)
2
cloves of garlic, grated
1
medium onion, finely chopped
1
red pepper, diced
1
tomato, grated
1
glass of water
Salt, to taste
Pepper, to taste
1
bay leaf
1
sprig of rosemary
1
sprig of thyme
A fistful of spinach, chopped
100
milliliters cooking cream
Instructions
Prepare the pork:
Cut the
pork
into strips and then cubes, making sure they are not too thick or thin.
Cook the pork:
Heat
2 tablespoons of sunflower oil
in a pan and fry the
pork
until it gets a nice color.
Season with
salt
,
sweet paprika
, and
hot pepper
(if using). Let it fry for about
5 minutes
.
Prepare the vegetables:
While the meat is cooking, finely chop the
onion
and
garlic
.
Dice the
red pepper
and grate the
tomato
.
Cook the vegetables:
Once the meat is browned, remove it from the pan and set aside.
In the same pan, sauté the
onion
for about
2-3 minutes
, then add the
red pepper
and let it cook.
Add the grated
tomato
and mix everything well.
Simmer the stew:
Add
1 glass of water
and season with
salt
and
pepper
.
Return the
pork
to the pan, then add
bay leaf
,
rosemary
, and
thyme
.
Cover the pan and let it simmer for
20-25 minutes
.
Add the spinach and cream:
Once the meat is cooked, remove the
bay leaf
,
rosemary
, and
thyme
.
Add
100 ml of cooking cream
and the chopped
spinach
.
Let it cook for another
10 minutes
.
Serve and enjoy:
Once everything is well mixed and cooked, serve the
