Tocană de Porc (Pork Stew)

Ingredients
  • 4 slices of pork (cut into strips and cubes)
  • 2 tablespoons sunflower oil (for frying)
  • Salt, to taste
  • Sweet paprika, to taste (or hot pepper if preferred)
  • 2 cloves of garlic, grated
  • 1 medium onion, finely chopped
  • 1 red pepper, diced
  • 1 tomato, grated
  • 1 glass of water
  • Salt, to taste
  • Pepper, to taste
  • 1 bay leaf
  • 1 sprig of rosemary
  • 1 sprig of thyme
  • A fistful of spinach, chopped
  • 100 milliliters cooking cream
Instructions
  1. Prepare the pork:
      • Cut the pork into strips and then cubes, making sure they are not too thick or thin.
  2. Cook the pork:
      • Heat 2 tablespoons of sunflower oil in a pan and fry the pork until it gets a nice color.
      • Season with salt, sweet paprika, and hot pepper (if using). Let it fry for about 5 minutes.
  3. Prepare the vegetables:
      • While the meat is cooking, finely chop the onion and garlic.
      • Dice the red pepper and grate the tomato.
  4. Cook the vegetables:
      • Once the meat is browned, remove it from the pan and set aside.
      • In the same pan, sauté the onion for about 2-3 minutes, then add the red pepper and let it cook.
      • Add the grated tomato and mix everything well.
  5. Simmer the stew:
      • Add 1 glass of water and season with salt and pepper.
      • Return the pork to the pan, then add bay leaf, rosemary, and thyme.
      • Cover the pan and let it simmer for 20-25 minutes.
  6. Add the spinach and cream:
      • Once the meat is cooked, remove the bay leaf, rosemary, and thyme.
      • Add 100 ml of cooking cream and the chopped spinach.
      • Let it cook for another 10 minutes.
  7. Serve and enjoy:
      • Once everything is well mixed and cooked, serve the Tocană de Porc hot.
