Prepare the ingredients:

- Finely chop 1 onion and a few cloves of garlic.
- Chop 2 medium-sized potatoes and 2 mushrooms.
- Dice 1 red pepper and 2 handfuls of spinach (optional).

Sauté the aromatics:

- Heat 1 tablespoon of oil in a pan.
- Add the chopped onion and garlic and sauté for 2-3 minutes until soft and fragrant.

Cook the potatoes:

- Add the chopped potatoes to the pan with the onions and garlic.
- Pour in enough water to cover the potatoes.
- Season with salt and bring it to a boil. Let it cook until the potatoes are tender.

Add vegetables:

- Once the potatoes are cooked, add the chopped red pepper, mushrooms, and spinach (if using).
- Let the mixture boil until the mushrooms reduce in volume and the spinach softens.

Season the stew:

- Season with pepper, sweet paprika, and mix everything well.
- Add 150 ml of liquid cream and stir to incorporate.

Prepare the eggs:

- Break 1 egg over the top of the stew, letting it cook in the liquid for 5 minutes with the lid on.
