Spiced Mango Chicken with Rice & Fresh Salad
Ingredients
For the Chicken:

chicken thighs

tablespoon mango masala

tablespoon sweet paprika
Black pepper, to taste

Cooking oil (for frying)
For the Vegetables:

medium onion, chopped
½
red pepper, sliced

yellow pepper, sliced

garlic cloves, minced

mushrooms, sliced
Salt and black pepper, to taste
For the Rice:
150
grams rice
450
milliliters water

tablespoon mango masala
For the Salad:
A handful of parsley, chopped

red onion, sliced
Tomatoes, diced
Cucumber, diced
Lettuce, chopped
Salt, to taste
Olive oil
Vinegar
Feta cheese, crumbled
Instructions
Prepare the Chicken:
In a bowl, mix
chicken thighs
with
mango masala, salt, sweet paprika, black pepper, and olive oil
.
Heat
cooking oil
in a pan over medium heat.
Fry the chicken for
3 minutes
on one side, then flip and cook for another
3 minutes
.
Cook the Vegetables:
Add the
chopped onion
to the same pan and sauté for
2 minutes
.
Stir in the
red and yellow peppers
and cook for
2 minutes
.
Add the
mushrooms
and
garlic
, season with
salt and black pepper
