Instructions

  1. Prepare the Dough
    1. In a large bowl, combine 10 tablespoons of oil, 10 tablespoons of milk, 5 tablespoons of sugar, and 2 eggs. Mix well.
    2. Add a pinch of salt, 1/2 teaspoon of baking powder, and 1/2 teaspoon of baking soda.
    3. Gradually incorporate 16 tablespoons of flour into the mixture. The dough should be non-sticky, so feel free to add more flour if necessary.
    4. Let the dough rest for 10 minutes in the fridge.
  2. Prepare the Lemon Cream
    1. Grate the peel of 2 unsalted lemons and place it in a large saucepan.
    2. Add 10 tablespoons of sugar, 1/2 teaspoon of salt, 6 tablespoons of flour, and 3 egg yolks to the saucepan.
    3. Gradually add 1 liter of milk while stirring continuously to avoid lumps.
    4. Heat the mixture on medium heat, stirring constantly, until it thickens. Once thickened, remove from heat.
    5. Add 1/2 packet of butter and the juice of the 2 lemons. Stir well until the butter melts and the mixture is smooth.
    6. Add vanilla extract to taste and mix everything together.
  3. Prepare the Cake Layers
    1. Divide the dough into 4 equal pieces.
    2. Roll out one piece of dough on a lightly floured surface until it's thin enough to fit into a baking tray.
    3. Grease the tray with a bit of oil and flour, then place the rolled dough inside. Bake in a preheated oven at 200°C (400°F) for about 5-7 minutes or until golden brown.
    4. Repeat the process with the remaining pieces of dough, baking them one at a time.
  4. Assemble the Cake
    1. Once the dough layers are baked and cooled, spread a layer of the lemon cream on top of one of the baked sheets.
    2. Repeat the process, layering the dough and cream until all the sheets and cream are used up.
  5. Final Touches
    1. Let the cake rest for a few hours or overnight for the flavors to meld.
    2. Serve chilled and enjoy the delicate, lemony goodness!
This cake is perfect for holidays and special occasions like Christmas, and it's best served chilled to allow the flavors to settle.
