Cook the Bacon:

- Fry the bacon slices in a pan until crispy.
- Transfer to a paper towel and let cool.
- Once cooled, chop into small pieces.

Prepare the Fillings:

- Grate the cheddar cheese (or substitute with cașcaval).
- Roughly chop the spinach.
- Dice the red bell pepper.
- Cut the chicken ham into smaller pieces if necessary.

Assemble the Pastries:

- Preheat the oven to 200°C (392°F).
- Line a baking tray with parchment paper.
- Place the puff pastry on a work surface.
- Spread cream cheese over half of the puff pastry sheet.
- Sprinkle on grated cheese, chopped bacon, chicken ham, spinach, and red bell pepper.
- Fold the other half of the pastry over the filling and press gently to seal.

Cut and Finish:

- Cut the filled pastry into bite-sized squares or desired shapes.
- Place them on the prepared baking tray.
- Brush the tops with egg yolk.
- Sprinkle with poppy seeds.
