For the Dough:
- 100 ml warm milk

Prepare the Dough:

- In a large bowl, mix together 100 ml warm milk, 100 ml water, 5 grams yeast, and stir well.
- Add 280 grams of flour, a pinch of salt, and 2 tablespoons of oil. Mix until everything is combined.
- Knead the dough for 5-10 minutes until it becomes smooth and no longer sticks to your fingers.
- Let the dough rest for 10 minutes.

Divide the Dough:

- After 10 minutes, divide the dough into 4 balls.

Prepare the Sheets:

- Take one ball of dough and stretch it out on a clean surface.
- Using a brush, grease both sides of the dough with oil.
- Let it rest for another 10 minutes.

Prepare the Filling:

- In a bowl, combine 500 grams of cottage cheese, 2 eggs, 4 tablespoons of sugar, a little vanilla, and a pinch of salt. Mix well.

Assemble the Pie:

- Grease a 23 cm diameter baking tray with a little oil.
- After resting, take one dough sheet and spread it on the worktop.
- Divide the cheese mixture into 4 portions, sprinkle one portion evenly over the dough.
- Roll the dough with the cheese inside, forming a roll.
- Place the rolled pie into the greased tray. Repeat with the other dough balls and cheese portions.

Egg Wash:

- In a bowl, whisk together 1 egg yolk and 2 tablespoons of milk.
- Use this mixture to brush the top of the pie.

- Sprinkle a few almond flakes on top of the pie, if desired.
- Place the tray in a preheated oven at 180°C for about 1 hour, or until golden and crispy.
