Roasted Chicken with Garlic Mustard Potatoes
Ingredients
- 500 grams Small potatoes (or potatoes of your choice),
- Salt, to taste
- Pepper, to taste
- 50 grams butter
- small sprig of rosemary (chopped), plus extra for seasoning
- 1 chicken breast, sliced
- Sweet paprika, to taste
- Hot pepper (optional), to taste
- Oregano, to taste
- 1 tablespoon oil (for frying chicken)
- A few cloves of garlic, crushed
- Chicken soup (or water), a few tablespoons
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Potatoes:

- Boil the small potatoes in salted water for about 10 minutes until tender. Drain them and place them in a baking tray.
- Season the potatoes with salt, pepper, and 50g butter. Add the chopped rosemary and mix well.
- Using a spatula (or spoon if you don't have one), slightly crush the potatoes. Add a few more sprigs of rosemary.
- Place the tray in a preheated oven at 200°C (392°F) and bake for 25 minutes, until crispy on the outside.

- Prepare the Chicken:

- While the potatoes are baking, season the chicken breast slices with salt, sweet paprika, hot pepper (optional), pepper, oregano, and 1 tablespoon oil. Mix well.
- Heat a pan over medium heat and cook the seasoned chicken for about 10 minutes, turning to brown on both sides.

- Prepare the Garlic Mustard Sauce:

- In a small bowl, crush a few garlic cloves and add salt, a little oil, and a few tablespoons of chicken soup (or water).
- Mix well, then add chopped fresh parsley for garnish.

- Assemble the Dish:

- Once the chicken is cooked and the potatoes are crispy and golden, serve them together. Drizzle the garlic mustard sauce over the potatoes and enjoy the flavors.
