Potatoes in Butter with Paprika and Mozzarella

Ingredients
  • 9 potatoes (cut into cubes)
  • Water (enough to cover the potatoes)
  • Salt (to taste)
  • 1 small onion (chopped)
  • 1 cup of butter
  • 1 tablespoon of paprika
  • 1 garlic clove (finely chopped, optional)
  • Mozzarella (cut into cubes)
Instructions
  1. Boil the Potatoes:
      • Peel and cut the potatoes into cubes.
      • Place them in a large pan and add enough water to cover them.
      • Season with salt and bring to a boil.
      • Let the potatoes cook for about 15 minutes or until they are soft.
  2. Prepare the Onion:
      • While the potatoes are boiling, chop the onion.
  3. Cook the Onion and Paprika:
      • In a separate pan, melt 1 cup of butter over medium heat.
      • Add the chopped onion and sauté for about 1 minute, or until it changes color.
      • Add 1 tablespoon of paprika and cook for another minute over medium heat.
  4. Combine the Potatoes:
      • Once the potatoes are boiled and softened, drain them and add them to the pan with the onion and paprika.
      • Add a little potato water if necessary, to help soften the mixture further.
      • Stir everything well to combine.
  5. Add Garlic and Mozzarella:
      • If using garlic, finely chop it and add it to the pan. Stir well.
      • Add the mozzarella cubes to the potatoes and stir again.
      • Turn off the heat and let the mozzarella melt.
  6. Serve:
      • Serve your potatoes in butter with paprika and mozzarella hot.
      • Enjoy as a side dish with salad or meat.
