For the dough
• Wash, peel, and cut the potatoes into smaller pieces.
• Boil them in cold water with 1 tsp salt and a sprig of rosemary until tender.
• Drain and let cool slightly.
• Mash the potatoes in a large bowl.
• Add the egg, salt, and grated cheese, mixing well.
• Gradually incorporate the flour and baking powder until a soft dough forms.
• If the dough is too sticky, add a bit more flour.
• Let the dough rest for 10 minutes.

For shaping and cooking
• Divide the dough into 8 equal pieces.
• Sprinkle flour (or lightly oil) the work surface.
• Roll or flatten each piece into a thin round flatbread.
• Cook on a hot, dry pan over medium heat until golden brown on both sides.
• Grease each flatbread with butter while still warm.
