Pork Ribs Soup (Ciorbă de Costiță)
Ingredients
4
pieces of pork ribs (cut into cubes, or any pork meat of your choice)
2
tablespoons oil (for frying)
Water (enough to cover the meat)
1
medium onion (finely chopped)
1
red bell pepper (chopped into small pieces)
1
celery stalk (chopped, can be any type of celery)
1
carrot (cut into cubes or grated)
2
potatoes (peeled and cut into cubes)
2
bay leaves
150
milliliters cooking cream
2
egg yolks
Salt (to taste)
Borscht (optional, for sourness, adjust to your preference)
Instructions
Prepare the Meat:
Cut the
pork ribs
into cubes and place them in a large pot.
Heat
2 tablespoons of oil
in the pot and add the meat.
Fry the meat until it takes on a light color.
Add enough
water
to cover the meat and bring to a boil. Let it cook for
10 minutes
.
Prepare the Vegetables:
While the meat is cooking, chop the
onion
,
red bell pepper
,
celery
, and
carrot
into small pieces or cubes.
Set the vegetables aside for later use.
Continue Cooking the Meat:
After 10 minutes, discard the water and replace it with
fresh water
to cover the meat.
In a separate pan, heat
2 tablespoons of oil
and add the chopped vegetables.
Fry the vegetables until they get a little color and soften.
Combine and Cook:
Add the sautéed vegetables to the soup pot with the meat.
Add the
2 potatoes
(cut into cubes) and
2 bay leaves
.
Let the soup cook until the potatoes are tender.
Prepare the Creamy Mixture:
In a separate bowl, mix
150 ml cooking cream
with
2 egg yolks
until smooth.
Take some of the hot soup and slowly add it to the creamy mixture to temper it, stirring continuously.
Pour the creamy mixture back into the soup, stirring constantly.
Season the Soup:
Season the soup with
salt
to taste.
If you like it sour, add some
borscht
to the soup and let it cook for another
5 minutes
.
Serve:
Serve the soup hot and enjoy!
