  1. Prepare the meatball mixture

    • Place the minced meat in a large bowl.

    • Add Parmesan, salt, black pepper, eggs, soaked bread, and olive oil.

    • Mix everything well until fully combined.

  1. Shape and cook the meatballs

    • Shape the mixture into medium-sized meatballs.

    • Fry them in a well-heated pan until nicely browned.

    • Alternatively, bake them at 200°C (390°F) on baking paper, drizzled with olive oil, until golden.

  1. Start the sauce

    • In the same pan, add the chopped onion.

    • Add the garlic and sauté gently for a few minutes.

    • If needed, add a little water to prevent burning.

  1. Build the sauce

    • Pour in the white wine and let it reduce slightly.

    • Add a cup of pasta cooking water.

    • Let the sauce simmer for about 10 minutes.

    • Season with salt to taste.

  1. Finish the sauce

    • Add the heavy cream.

    • Add the sun-dried tomatoes and a little Parmesan.

    • Return the meatballs to the pan.

  1. Combine with pasta

    • Add the al dente pasta to the sauce.

    • Pour in a little more pasta water if needed.

    • Let everything cook together for about 3–4 minutes.

  1. Serve

    • Serve hot, with extra Parmesan on top if desired.
