Oven-Baked Potato Pizza
Ingredients
600
grams potatoes, grated

eggs

tablespoon sour cream
Salt and black pepper, to taste

tablespoons flour
1
handful fresh parsley, chopped (optional)

tablespoons olive oil
A few tomatoes, finely chopped
100
grams cheddar cheese, grated
Instructions
Prepare the Potato Base:
Grate the
potatoes
and rinse them in water to remove excess starch.
In a large bowl, whisk
eggs
with
sour cream, salt, and black pepper
.
Add
flour
and mix until you get a pancake-like batter.
Stir in the
chopped parsley
(if using).
Add the
grated potatoes
to the mixture and combine well.
Drizzle
olive oil
and mix again.
Bake the Base:
Preheat the oven to
200°C (392°F)
.
Pour the mixture into a
baking tray
lined with parchment paper.
Bake for about
20-25 minutes
or until golden brown on top.
Add the Toppings:
While the base is baking,
chop the tomatoes
and season them with
salt and pepper
.
Once the base is done, spread the
tomatoes
over it.
Sprinkle
grated cheddar cheese
on top.
Final Bake:
Return to the oven for
another 10 minutes
, or until the cheese melts.
Remove from the oven and let it cool slightly before slicing.
