Oven-Baked Chicken Thighs with Potatoes and Vegetables

Prepare the Chicken Thighs:

- Place the 8 chicken thighs in a bowl and season with salt, black pepper, sweet paprika, and oregano.
- Add 2-3 tablespoons olive oil and mix everything well.
- Sear the chicken thighs in a pan until they get a nice color on both sides (about 2 minutes per side).

Prepare the Vegetables:

- Peel and cut 4-5 medium potatoes into pieces and place them in a baking dish.
- Cut the cherry tomatoes in half and add them over the potatoes.
- Slice the 1 red onion into rounds and scatter it over the potatoes and tomatoes.
- Crush the 2 cloves of garlic and sprinkle over the vegetables.
- Add 2 sprigs of rosemary to infuse the dish with aroma.

Combine Chicken and Vegetables:

- Once the chicken is browned, place it on top of the prepared vegetables.
- Drizzle with a bit of the oil from the chicken and an extra 1 tablespoon of olive oil over the vegetables.

Bake:

- Preheat the oven to 200°C (400°F).
- Put the entire pan in the oven and bake for 1 hour, or until the chicken is fully cooked and the potatoes are tender.

- Once done, remove from the oven and let it cool slightly before serving.
