Prepare the Vegetables
- Cut the potatoes into cubes.
- Slice the red pepper into rounds and the onion into slices.
- In a large bowl, mix the potatoes, red pepper, and onion together.
- Season the vegetables with salt, black pepper, and sweet paprika.
- Drizzle olive oil over the mixture and toss everything together until evenly coated.

Prepare the Chicken Rolls
- Take the chicken breasts, cut them in half, and beat them flat using a meat mallet or rolling pin.
- In a separate bowl, season the chicken with salt, black pepper, sweet paprika, and olive oil. Mix everything well.
- Take each piece of seasoned chicken and place a small amount of mozzarella (or cheddar cheese) in the center.
- Roll the chicken up tightly, securing the cheese inside.

- Transfer the seasoned vegetable mixture into a large oven-safe tray.
