No-Bake Peach and Raspberry Cake with Ladyfingers

  1. Prepare the gelatin:
      • In a small bowl, combine 12 g of gelatin with 50 ml of water and let it hydrate.
  2. Prepare the cream mixture:
      • In a large bowl, mix 250 g mascarpone cheese with 1 teaspoon vanilla extract.
      • Add 400 ml condensed milk, first incorporating it with a spatula, then using a mixer.
      • Gradually pour in 100 ml of heavy cream, mixing well.
      • Melt the hydrated gelatin and slowly incorporate it into the mixture.
  3. Prepare the peaches:
      • Drain the canned peaches (or use fresh ones).
      • Cut half into cubes and the other half into thin slices.
  4. Assemble the cake:
      • Line the bottom of a tray with peach slices.
      • Add a third of the cream mixture.
      • Layer cubed peaches and frozen raspberries.
      • Repeat layers: cream → fruits → cream, finishing with a layer of cream.
      • Soak ladyfingers in peach juice and place them on top.
      • Flatten everything well, cover with plastic wrap, and refrigerate for at least 4 hours (preferably overnight).
  5. Serve and enjoy!
      • Remove from the fridge, take off the plastic wrap, and place on a serving tray.
      • Slice and enjoy this creamy, fruity, and refreshing dessert!
