Ingredients
  • 5 eggs
  • Salt (to taste)

Instructions
  1. Prepare the Bacon:
      • In a pan, fry the bacon until it becomes golden and crispy.
      • Remove the bacon and set it aside to cool, then chop it into small pieces.
  2. Prepare the Egg Mixture:
      • In a large bowl, break 5 eggs and season with salt and black pepper.
      • Beat the eggs well and add 2 tablespoons of cream cheese (or substitute with yogurt or sour cream). Mix until well combined.
  3. Prepare the Vegetables:
      • Finely chop the red bell pepper.
      • Dice 2 small tomatoes (or any kind of tomatoes you prefer).
      • Chop the fresh basil (or substitute with parsley or dill).
  4. Assemble the Muffins:
      • Preheat the oven to 200°C (392°F).
      • Grease a muffin tray with a little oil. Alternatively, use muffin liners to prevent sticking.
      • In each muffin slot, place a few spinach leaves.
      • Add a little of the chopped red pepper, tomatoes, mozzarella, and bacon.
      • Pour the egg mixture over the ingredients, filling the muffin tray slots.
