Juicy Stuffed Chicken Breast with Cheddar, Salami, and Tomatoes

  1. Prepare the Chicken
    1. Cut each chicken breast in half horizontally to create a pocket or “buzzer” for stuffing.
    2. Season both sides with salt, black pepper, paprika, and red pepper (optional).
    3. Place each breast on a cutting board and add 1 tablespoon of butter on top of each.
  2. Add the Filling
    1. Place a slice of cheddar cheese inside each chicken pocket.
    2. Add 3 slices of salami on top of the cheese.
    3. Add a few cherry tomatoes (or sliced regular tomato) into the pocket.
    4. Fold the chicken closed to hold the stuffing inside.
  3. Cook the Chicken
    1. Pour a little olive oil into a baking dish and spread it evenly.
    2. Place the stuffed chicken breasts into the dish.
    3. Score the tops lightly with a knife to help them cook evenly.
    4. Season the tops again with salt, pepper, and optional spices.
    5. Add 1 teaspoon of butter on top of each chicken piece.
    6. Bake in a preheated oven at 200°C (390°F) for 30 minutes.
  4. Final Touch
    1. After 30 minutes, remove the chicken from the oven.
    2. Place another slice of cheddar on top of each breast.
    3. Return to the oven for another 10 minutes, until the cheese is melted and bubbly.
  5. Garnish & Serve
    1. Sprinkle with chopped green onion, parsley, or dill for freshness.
    2. Serve hot — great with mashed potatoes, rice, or a fresh salad.
